Strawberries and Cream French Toast Roll-Ups
Serves: 3-4
Ingredients:
  • 2/3 cup Promised Land Very Berry Strawberry milk
  • 2 eggs
  • 8 slices (1/2 inch thick) day-old egg bread
  • 3/4 cup mascarpone cheese
  • 2 tablespoons honey
  • 1/4 cup finely chopped strawberries
  • 3 tablespoons butter
  • 1 tablespoon icing sugar
  • maple syrup, for serving
  • Directions:
    1. Whisk milk with eggs; set aside. Using a rolling pin, flatten each bread slice; set aside. Mix mascarpone cheese with honey until blended; stir in strawberries. Spread evenly over each slice and roll up.
    2. Melt half of the butter in nonstick skillet set over medium heat; dip each roll-up in egg mixture until evenly coated. Cook in batches, turning and adding remaining butter as needed, for 3 to 5 minutes or until golden brown all over. Dust with icing sugar. Serve with maple syrup.
    3. Garnish with fresh strawberries if desired.
