Creamy Cauliflower Red Pepper Soup

  • 1 tablespoon olive oil
  • 1 tablespoon chopped garlic
  • 1 cup diced onion
  • 2 cups vegetable or chicken broth
  • 6 cups chopped cauliflower florets
  • 2 cups Promised Land Dairy Whole or 2% Milk
  • 1 cup diced red bell pepper
  • 3/4 teaspoon salt
  • Fresh ground black pepper (to taste)
  • Chives (optional)
  • Chili flakes (optional)
  1. Heat olive oil, garlic and onion in large saucepan over medium heat.
  2. Cook for 3 to 5 minutes until soft; add cauliflower and broth.
  3. Increase heat to medium high; cover and bring to a simmer. Cook for 8 minutes until cauliflower is very tender.
  4. Carefully pour hot cauliflower mixture in food processor. Process 2 to 3 minutes until mixture is very smooth.
  5. Return cauliflower mixture to saucepan and heat over medium heat. Stir in milk, red bell peppers and salt. Stir occasionally until soup begins to simmer.
  6. Season with black pepper, chives and chili flakes as desired.
