EGGNOG ICE BOX COOKIES

Serves 6-8

INGREDIENTS:

2 3/4 cups flour
1/2 cup softened butter
1 cup sugar
1/2 cup Promised Land Dairy Old Fashioned Eggnog
1/2 teaspoon vanilla
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
3 cups powdered sugar
1 cup softened butter
1/2 teaspoon vanilla
1/4 cup Promised Land Dairy Old Fashioned Eggnog

Directions:

  • Beat 1/2 cup softened butter and 1 cup sugar until fluffy.
  • Add 1/2 cup Promised Land Dairy Old Fashioned Eggnog and 1/2 tsp. vanilla. Mix well.
  • Combine flour, baking soda, cinnamon and nutmeg. Mix well.
  • Gradually add flour mixture to sugar mixture. Mix well.
  • Divide dough in half in the shape of a log, approximately 2 to 2 1/2 inches in diameter.
  • Refrigerate overnight.
  • Preheat oven to 350 degrees.
  • Cut each log into 1/4-inch slices.
  • Bake on an ungreased baking sheet for 10 minutes or until very lightly brown.
  • Let cool and add icing. Approximately 5 dozen cookies.

Eggnog Icing

  • 3 cups powdered sugar
  • 1 cup softened butter
  • 1/4 cup Promised Land Dairy Eggnog

Directions

  • Combine 3 cups powdered sugar, 1 cup softened butter and 1/2 tsp. vanilla until blended. Gradually add 1/4 cup Promised Land Dairy Old Fashioned Eggnog until smooth.

Note: Add more Promised Land Dairy Eggnog, if icing is too thick. Add more sugar, if icing is too thin.
