Whisk milk with eggs; set aside. Using a rolling pin, flatten each bread slice; set aside. Mix mascarpone cheese with honey until blended; stir in strawberries. Spread evenly over each slice and roll up.
Melt half of the butter in nonstick skillet set over medium heat; dip each roll-up in egg mixture until evenly coated. Cook in batches, turning and adding remaining butter as needed, for 3 to 5 minutes or until golden brown all over. Dust with icing sugar. Serve with maple syrup.
Garnish with fresh strawberries if desired.
